Canary Club to Bring Wood-Fired Pizza & Cocktails to Downtown Bonita Springs

The trailblazing couple behind Downtown Coffee & Wine Company and The Bohemian is bringing yet another food concept to Downtown Bonita Springs called Canary Club.

Brandon & Caitlin Schewe met through the local restaurant scene. They moved to Downtown Bonita Springs 12 years ago and watched the area begin to grow. The Schewes have believed in Bonita Springs from the beginning. They saw the “big bright future” mentioned in the city’s longtime slogan. In 2017 the city invested millions into the downtown area and shortly after, businesses began trickling in.

The pioneer was Downtown Coffee & Wine Company. After experiencing wild success, they opened The Bohemian in the Entrada Plaza just up the road. The trendy tapas spot gained attention quickly for its beautifully eclectic interior and sophisticated menu. The Bohemian was another first for the up-and-coming downtown. It brought a chic vibe that had yet to be seen along Old 41 Rd.

Now, the restauranteur couple is adding another concept to their portfolio and the Downtown Bonita Springs landscape. Canary Club Pizza & Cocktails will feature gourmet, wood-fired pizzas, tapas, and cocktails with a Mediterranean and Middle Eastern twist. In typical Schewe fashion, the Canary Club menu will focus on quality ingredients and techniques. All pizzas will start with a sourdough crust and be finished in a real wood fire oven, something that is hard to find in SWFL.

The menu has yet to be finalized, but we got an exclusive first look at some of the mouth-watering ideas swirling around Chef Brandon Shewe’s culinary mind.

While Brandon works to finalize the menu, Caitlin puts her interior design background to work finalizing the space. The vision for Canary Club includes rattan furniture, warm tones, oriental rugs, and lots of foliage. Inside, customers will have a variety of seating options, including a 14-person bar. Outside, a paver patio will provide an opportunity for outdoor seating. The above floorplan does not show it, but Caitlin plans to create multiple, private spaces with differing seating arrangements separated by large planters.

Canary Club is currently under construction at the Northernmost commercial unit at Waterline along Old 41 Road, neighboring the recently announced Sauna House. There are still two units left in the long-empty commercial space that are expected to be rented soon.
