Something tasty is brewing in Downtown Bonita Springs. Whichcraft sandwhich shop is preparing to open it’s doors in the Entrada Plaza on the corner of Old 41 and Bonita Beach Road. We sat down with one of the owners, Caitlin Emery-Schewe, to get the inside scoop on Bonita’s newest eatery.

Wichcraft Gourmet Sandwiches is set to open in Entrada Plaza in the coming weeks, bringing a chef-driven, highly customizable sandwich shop to the heart of downtown. Located right next door to The Bohemian, the new spot comes from the same team behind several well-known local favorites, continuing their growing footprint in the area.
While each of their concepts has its own identity, Wichcraft feels like a natural next step – blending thoughtful design, creative food, and a strong sense of place.
A Familiar Team, A Fresh Concept
From owners Caitlin and Brandon, known for The Bohemian, Canary Club, and Downtown Coffee & Wine, Witchcraft Gourmet Sandwiches builds on a style that locals have already come to love – spaces that feel layered, collected, and intentionally different.
This time, the focus shifts to something both elevated and approachable: a sandwich shop that goes beyond the basics.

Right at Home in Entrada Plaza
Wichcraft is opening in Entrada Plaza, further activating a stretch of downtown that continues to see steady growth.
Inside, the space is hard to miss. A bold, bright green interior sets the tone, complemented by eclectic artwork and unique fixtures. Like its sister spots, much of the décor is sourced from secondhand and vintage finds, giving the space a curated, lived-in feel rather than something overly polished.
That same love of thrifting doesn’t stop at the design.

More Than a Sandwich Shop
In addition to the food, Wichcraft will feature what Caitlin described as the “world’s tiniest thrift shop.”
A small, rotating selection of vintage clothing, art, and home décor, sourced both personally and through local thrifters, will be available for purchase inside the shop. It’s a subtle addition, but one that reinforces the overall concept: a space that feels creative, personal, and a little unexpected.
Caitlin shared that in their coffee shop, the space was just too small for her to fully cultivate that sense of community she craved. Here, with the room to breathe, she’s designed Wichcraft to be a place where people can gather, connect, and discover something new – whether that’s a sandwich, a vintage find, or just a moment of calm in downtown.

A Chef-Driven Approach to Sandwiches
At its core, Wichcraft is a handcrafted gourmet sandwich shop – but with a level of detail that sets it apart.
The menu allows guests to fully customize their sandwiches, choosing from a wide range of breads, meats, cheeses, toppings, and house-made sauces. But for those who prefer a starting point, the shop also offers a lineup of signature “sandos” that lean into bold, layered flavors. Beyond their signature selections, the shop will also feature rotating specials that keep the offerings fresh and exciting. So, there will always be a familiar favorite, but something new to look forward to each time.
Standouts include the Florence, built with prosciutto, burrata, pistachio pesto, and truffle honey, and the Gobbler, a comfort-forward combination of pulled turkey, cornbread stuffing, and cranberry orange relish. The Southwest FL Philly brings a local twist with shaved prime rib, caramelized onions and peppers, and chipotle aioli, while a Vietnamese Banh Mi features citrus ginger pulled pork with pickled vegetables and fresh herbs.
Beyond the combinations themselves, it’s the preparation that really defines the concept.
According to the team, all meats, aside from a couple of imports, as are brined, smoked, and roasted in-house. The focus is on building each sandwich from the ground up, rather than assembling pre-made ingredients.
There’s also an emphasis on sourcing locally, including partnerships with places like Farmer Mike’s right here in Bonita Springs, keeping the concept rooted in the community it serves.
Sides go a step beyond the standard as well, with options like heirloom tomato and cucumber yuzu salad, alongside house-made kettle chips served with their signature dipping sauce. And for something sweet, gelato sandwiches round out the menu.

Still Brewing, But Opening Soon
While an exact opening date hasn’t been announced, Wichcraft Gourmet Sandwiches is expected to open before May 1, just in time to head into late spring with another new addition to downtown.
For those following the continued evolution of Bonita Springs, it’s another example of how new concepts are shaping the area, bringing in ideas that feel both curated and community-driven.
